Coq Au Vin is a classic French dish of chicken cooked in red wine, elegant, delicious and easy to make with Pietra's Make it French!
1/2 lb low salt or no salt bacon slices cut into bite size pieces
1 large yellow onion sliced or 12 peeled pearl onions
3-4 lbs of your favorite chicken parts, skin-on
5 garlic cloves, peeled
1/2 button mushrooms, sliced
2 cups chicken stock
2 cups red wine
1 tablespoon Pietra's Make it French spice blend
2 tbsp butter
1. brown bacon in a large pot on medium heat until browned. Use a slotted spoon and set aside.
2. Add chicken, skin side down to hot pan, brown chicken well, on all sides, about 10 minutes
3. add onions and garlic and cook for one minute. Do not overcook. If there's too much fat in the pot, spoon some excess fat.
4. add chicken stock,wine, Pietra's Make it French!. Add browned bacon
5. Lower heat to a simmer. Cover and cook 25-30 minutes until chicken is tender
6. Remove chicken and onions to a separate platter
7. Add mushrooms to remaining liquid and boil quickly to reduce liquid until it thickens
8. Lower heat, stir in butter, return chicken and onions to pan.
9. Add salt and pepper to taste
10. Serve with sliced french baguette or traditionally with roasted potatoes and peas
