Make it Cajun! is a unique blend of spicy and rich flavors. It will take the guesswork and time to gather spices to make Cajun dishes. Cajun cuisine is a style of cooking named for the French speaking people from the Acadia region of Canada that migrated to the Acadia region of Louisiana and Mississippi. Today, Cajun cuisine is found around the world.  My family has enjoyed many trips to Cajun restaurants in the USA, notably, Yabbi's Kitchen in Colorado. We have sampled Yabbi's kitchen over 30 times as our names on the wall have kept tract of this. We also have frequented other fine restaurants including ones found in New Orleans. We have enjoyed every day Cajun, from simple po' boy sandwiches, craw fish boils and fine Creole and Cajun dining including Etouffes and the best Seafood Jumbo's and Jambalayas. We know good Cajun cuisine! 

Most traditional Cajun dishes start with a roux, a mixture of equal parts of flour and oil that is cooked for one hour. I am not a fan of heavy sauces, nor do I have the time to stand over the stove for one hour. Therefore, I have developed dishes that still give the traditional Cajun flavor with a simple light roux that can be cooked in one minute. Next you add the  "Holy Trinity" Bell pepper, Onion and Celery. Add,  Make it Cajun! spice and you have created the base to most Creole and Cajun dishes. Taste the Magic with Make it Cajun!
